I first reached out to Eden because they produce foods that are organic, nutrient-dense and grounding. They also use pine resin to line their cans, instead of non-stick coating, containing BPA and other toxins.

Today I wanted to share one of my favorite recipes using their Great Northern beans and Cannellini beans. This is a great way to get extra protein into your diet. You can use this low-sugar dip as a snack or meal to fill you up!
Tuscan White Bean Spread / Dip
Serves 6 | Prep time: 5 minutes | Cook time: 0 minutes
15 ounces EDEN Cannellini Beans, do not drain
or EDEN Great Northern Beans
2 cloves garlic, minced
2 Tbsp EDEN Extra Virgin Olive Oil
1/4 cup freshly squeezed lemon juice
1/2 tsp EDEN Sea Salt
1 tsp ground cumin
1 tsp dried cilantro
1/4 tsp crushed red pepper
1 Tbsp fresh parsley, minced
1 Tbsp organic roasted tahini (sesame butter)
Place all ingredients in a blender and purée until smooth and creamy. Spread on bread or bagels, or use as a dip for vegetables or EDEN Brown Rice Chips.
Per serving: 113 calories, 7g fat (51% calories from fat), 4g protein, 10g carbohydrate, 3g fiber, 0mg cholesterol, 162mg sodium
